Croquembouche
(Pronounced crow-come-bush.) French for “cracks in your mouth.” A cone of cream puffs filled with French pastry cream made fresh at the bakery. Coated with caramelized sugar and decorated with elegant marzipan roses made petal by petal. Popular in France for weddings, communions and other special occasions.

Christmas tree version includes cream puffs dipped in red and green sugar with Santa Claus decorations and lightly dusted with powdered sugar snow. Makes a great centerpiece. Seasonal: October through May. Two cream puffs per serving. Made in sizes of 30 to 60 servings. Must be eaten on the same day.
