Did you know? The name "petit fours" originated in France. Since they were tiny pastries baked in tiny
ovens (fours), they became known as "small ovens", petit fours. They arose in the 18th century, and became more popular during the 1800's when the custom of afternoon tea started. Now they are popular for appetizer parties and wedding receptions.The type of petit fours that most of us are familiar with are
petit fours glacés, which look like tiny cakes covered in icing. Jean-Marc prefers the petit fours frais,
or mini pastries, because they involve many different flavors and textures, including the use of fresh fruit,
as well as fresh pastry cream, ganache, and caramelized sugar.
