Croquembouche A traditional French wedding
cake. In our country it is frequently used as a festive showpiece or centerpiece
for a dessert table. Cream puffs, made from scratch and filled with fresh custard,
are arranged in a cone shape, held together with caramelized sugar, and decorated
for the occasion. A wedding croquembouche is decorated with pastillage roses
and Jordan almonds. Not available during humid weather. 80 puffs on bouche.
If you need to serve more people, extra puffs may be ordered and arranged around
the base of the croquembouche.
