The Opéra cake debuted in the early 1900’s as “Gateau Clichy” in Paris and was reinvented in 1955 by a pastry house, Dalloyau, whose ancestors served Louis XIV. Dalloyau renamed it Opéra as a tribute to the Paris Grand Opera, associating its many layers with the many acts of an opera.
